Hot & Crunchy Slaw

The perfect hot sauce slaw to accompany fried chicken or cold cuts. The buttermilk brings balance and make this slaw lighter and less clergy than the usual coleslaw. The finely shredded cabbage and carrot retain there crunch in the creamy dressing.

Hot & Crunchy slaw
Yields6 Servings
 ½ Head of White cabbage,
 1 Large carrot,
 ½ Red onion,
 200 g Mayonnaise,
 80 ml Buttermilk
 ½ tsp Corse black pepper
 2 tbsp Of your favourite hot sauce,

Place the grated carrot between two sheets of kitchen paper and squeeze to release most of the carrots liquid, this prevents it leaking into the slaw making it to watery. To a large bowl, add the sliced cabbage, grated carrot and sliced onion. Mix together.

In another bowl mix together the buttermilk, mayonnaise,black pepper and hot sauce if using. Pour over the crunchy vegetables and mix well to combine everything in the dressing. Check for seasoning, I find mayonnaise usually quite salty and don't find it requires further salting.
