Tortilla Breakfast Pie

A simple breakfast egg & ham pie. Crispy toasted tortilla pie crust with cheesy egg and ham filling.

 1 tsp Vegetable oil
 2 Flour tortilla wraps
 2 Slices ham
 2 Eggs
 50 g Mature Cheddar

Heat oven to 200°C. Oil a cast iron skillet or other suitable oven proof dish with the vegetable oil. Line with one of the tortillas, make sure that the tortilla comes up the sides of the pan a little.

Tear the ham into the pan, crack in the eggs and add 2/3 of the grated cheese. Sprinkle the egg yolks with sea salt.

Place the second tortilla on top and push down around the side carefully. Pinch and press together the sides of the tortillas to seal. Sprinkle the remaining cheese on top of the pie then place in the oven for 13 - 15 minutes until the eggs are just set, the cheese melted and blistered and the tortilla bronzed and crisp. (If using a cast iron pan heat on the hob for 45 seconds before transferring to the oven or give an extra couple of minutes in the oven.
