Granny Diver’s Chicken SoupBy danieldiverA hearty rustic chicken and vegetable soup. This soup is exactly the type of soup I crave when the weather is cold and the skies are grey. In the colder months a large pot of this was always on my granny's stove. If you are fat adverse you may like to skim the fat off as the chicken cooks. My granny never did this and neither do I but if it pleases you to do so then please do.
Granola MuffinsBy danieldiverMuffins for breakfast may seem like a lot of work but these really aren't. It's just a matter of mixing a few dry and wet ingredients together and a lazy whisk together and 20 minutes later you will have warm from the oven muffins. I find these particular useful on lazy weekend mornings as I'm the type of person who likes to have several cups of tea before breakfast and this allows me the time to do that.

I do love the American term grilled cheese so have decided to go with that as the title. This is without question one of the most made sandwiches in my house and one of the most comforting.

Guacamole EggsBy danieldiverThis dish came to creation on a morning I wanted Turkish eggs for breakfast, but I had some avocados that really needed using up. Turkish eggs are a dish of poached eggs served on a garlicy yoghurt sauce with a chilli sauce, it does sound like a weird combination but is truly heavenly. I discovered the recipe for Turkish Eggs in Nigella Lawson's book At my table. I made them so often, but with a little tinkering with the addition of the avocado and chorizo this is what I came up with and what I always do now. One thing, for me at least, that is a requirement is that you have some good thickly sliced bread toasted to dip into the oozing egg and use as a spoon to scoop it up with. Note: If you aren't a confident cook you may want to prepare the guacamole element and the chorizo butter sauce before you poach the egg.
Guinness BreadBy danieldiverA delicious and simple Irish Guinness bread recipe. This bread gets it molasses rich flavour from both the Guinness and from black treacle. It makes is great eaten with Irish stew, soups and chowders or simply slathered with some good butter.

Guinness CheesecakeBy danieldiverGuinness Cheesecake, sounds a bit wacky right? I can assure you that from the first bite you will love it. I originally came up with this recipe for St. Patrick’s Day, but I find that I make this recipe year-round. The base is made of chocolate and cream cookie, Oreos in other words, then it has the creamy, silky Guinness cheesecake layer. The Guinness layer has a subtle molasses flavour with just a hint of chocolate and the manilla toned topping incorporates Baileys or Irish cream giving the cheesecake a third flavour dimension that is incredibly good. As with all baked cheesecakes I think it is much better made a day ahead. Somehow everything just seems to come together the flavours really shine through, and the consistency becomes better.
Halloumi, Mint & Pomegranate SaladBy danieldiverA refreshing and vibrant salad. Halloumi has a rubbery salty consistency when heated and browned in a dry frying pan it turns it into what I think of as vegetarian bacon. The combination of rocket, mint leaves, and pomegranate seeds give you a peppery refreshing salad with bursts of fruitiness.

Hazelnut NegroniBy danieldiverMy seasonal twist on the Negroni. Traditional it consists of equal measures of Campari, Red vermouth and gin. I actually came upon this version during lockdown one evening when I felt like a Negroni and had run out of gin, due to limiting shopping trips i thought I'd add a splash of Frangelico. It was heavenly. It is strange that this drink conjures tastes of chocolate orange to me even though it doesn't contain chocolate whatsoever. I believe it comes from the butter hazelnut flavours imparted by Frangelico. Frangelico is a hazelnut liquor from Italy that has a warm buttery hazelnut flavour. I think of it as Nutella in liquor form. It works so well in desserts or stirred through a hot chocolate for a cosy nightcap.
Herb Stuffed Roast Leg of LambBy danieldiverRoast leg of lamb is a real treat. For this recipe I get my butcher to remove the bone and butterfly it. I do this so that I can stuff the leg of lamb and it makes carving so much easier. It produces a highly flavoured melt in the mouth roast lamb. Honey Roast ParsnipsBy danieldiverI don't think Christmas dinner would be complete without these sweet earthy glazed parsnips. Although, I think they are a great accompaniment to a roast dinner at other times of year too.

Hot & Crunchy SlawBy danieldiverThe perfect hot sauce slaw to accompany fried chicken or cold cuts. The buttermilk brings balance and make this slaw lighter and less clergy than the usual coleslaw. The finely shredded cabbage and carrot retain there crunch in the creamy dressing.
