What is fantastic about this recipe is that it really is a blue print for your favourite treats. You can switch the biscuits for malteasers, you could add glace cherries, pistachios, within reason almost anything.

This version does have a quick soft set jelly that is uber delicious, although if like me this becomes a midnight sweet treat I often use jam with a little lemon juice just to loosen it and make it a little more spreadable.

The white chocolate mousse is very rich but that crimson raspberry ripple has just enough tartness to cut through the richness of it all making for a dream combination. I make these in goblets, wine glasses etc. as they look most impressive when that ripple of raspberry can be seen streaky through the pale mousse. You can serve it in whatever vessel you though.

S’more CookiesBy danieldiverThis is the sort of cookie that kids just love and quite a few adults too for that matter. I came up with the idea for these cookies whilst sitting on the sofa watching a movie. In the movie, they were making s'mores. This got me thinking how wonderful that sticky melted marshmallow would be as an interior to a cookie. Obviously, I could barely wait to give these ago the first chance I got I started experimenting. It did take a few goes to get the cookie dough just right so that it was sturdy enough to contain or at least mostly contain the marshmallow, but also being easy enough to form around the marshmallow. The final result gives you a chocolate cookie shell with an elasticy marshmallow centre.
Salt & Chilli ChickenBy danieldiverI cannot express emphatically enough how much I love this dish. Crispy chicken pieces with stir fried vegetables and a simply speedy chilli chicken glaze. It's not very complicated and doesn't require much skill to prepare and is so much better than a takeaway. I suggest serving with noodle, chips or even potato wedges since the ovens on anyways.
Salted Caramel Espresso MartiniBy danieldiverA real pick me up cocktail. This will liven up any party. I do love an espresso martini but this salted caramel espresso martini is on a whole other level. The bitter espresso makes this cocktail very smooth and balances the sweetness making it easy to drink very many of them all too easy.
