Za'atar Chicken & Sweet Potatoes

 2 tbsp Garlic oil
 2 tbsp Za’atar spice mix
 ½ tsp Sea salt flakes
 8 Chicken thighs
 2 Large sweet potatoes

Preheat oven to 200°C. Drizzle the roasting pan with garlic oil and sprinkle in za'atar and salt. Rub the chicken thighs skin side down in the spices the turn over and smoosh about to coat everything.

Cut the potatoes into large chunks and strew about the pan in any crevices and tuck under and around the chicken. Roast in preheated oven for 1 hour until chicken is golden, bronzed, crispy and cooked through.
