Maple brussel sprouts with pancetta and chestnuts

Maple Brussel Sprouts with Pancetta & Chestnuts

I promise you that you won’t be disappointed with these sprouts, I have even converted some sprout loathers with these. The sweet and saltiness of the pancetta and maple syrup work in partner with the chestnuts and sprouts to give you a side dish that frankly I could eat as a main in itself.

Ingredients

500 g Brussel sprouts
Drizzle of olive oil
85 g Pancetta lardons
180 g Cooked vaccum packed chestnuts
2 tbsp Maple syrup

Directions

Prepare the sprouts by removing any outer leaves that don’t look their best. Trim the bottoms off and make a cross in the bottom of each sprout.

Bring a saucepan of water to a boil. Cook the sprouts for 5 – 6 minutes until just tender. Drain and set aside.

Meanwhile, add a drizzle of oil to a pan and cook the bacon over medium heat until bronzed. Crumble in the chestnuts stirring them in the bacon juices until warmed through. A couple of minutes will do. Switch off the heat and add the maple syrup and sprouts to the pan. Stir everything together in the pan. Transfer to a warm serving bowl.

Sticky Toffee Pudding

Slow Cooker Sticky Toffee Pudding

This sticky date pudding is cooked in quite a radical way. It does require a leap of faith but you rewarded with a tender sponge, much like a steamed sponge and a molasses rich sauce with very little work.

Ingredients

150 g Mejool dates pitted and chopped into small pieces
1 tsp Bicarbonate of soda
500 ml Boiling water
150 g Unsalted butter
80 g Dark muscovado sugar
40 g Caster sugar
2 Eggs
180 g Plain flour
2 tsp Baking Powder
½ tsp Salt
For the sauce
500 ml Water that dates steeped in
25 g Unsalted butter
50 g Dark muscavado sugar

Directions

Place the chopped dates in a bowl, add bicarbonate of soda and pour over boiling water. Set aside to allow the dates to soften.

Prepare the cake batter by creaming the butter and sugar together until smooth and pale. Whisk in the eggs one at a time until all incorporated.

In another bowl combine flour, baking powder and salt. Give a quick whisk to distribute the ingredients. The pour into the wet then whisk together until a smooth batter.

Remove the dates from the bowl of hot water with a slotted spoon or sieve. (Don’t throw away the liquid this will be the base for the pudding sauce) Squidge the dates with a fork to break them down a little further, before folding into the cake batter with a spatula.

Grease the bowl of your slow cooker with butter. Add the cake and spread as flat as possible with a spatula.

To make the sauce part, sprinkle the cake with the remaining dark brown sugar and cut the butter into small cubes and scatter over the cake. Gently pour the water reserved from the steeping dates on top of the butter and sugar on top of the cake and cook on a high setting of the slow cooker for 3 hours. Serve warm with cream or ice cream.

cranberry & white chocolate cheesecake

Christmas Cheesecake (Cranberry & White Chocolate)

This is such a seasonal cheesecake and even white chocolate haters will love it. The tartness from the ruby red cranberries cut the sweetness of the white chocolate giving you harmonious flavoured cheesecake.

250 g Digestive Biscuits
100 g Unsalted buttervery soft or melted
100 g White chocolategood quality
400 g Cream cheeseat room temprature
1 tsp Vanilla extract
250 ml Double cream
75 g Icing sugar
250 g Cranberry sauceif using from a jar 1 – 2 tbsp orange juice to loosen
25 g White chocolate To decorate cheesecake with

Directions

Break the biscuits into a food processor and blitz until a fine crumb. You can do this by hand in a food zip lock food bag, pulverize the biscuits with a rolling pin until a fine crumb is achieved. Pour the soft or melted butter down the funnel of the food processor with the motor running until the mixture begins to clump around the blade.

Press the mixture into a 22 cm/8″ springform cake tin with knuckles , or the back of a spoon, until smooth and flat. Place this in the fridge while you get on with the rest.

Meanwhile, melt the chocolate in a pan suspended over a pot of hot water, stir occasionally. Be careful melting the white chocolate as it can cease if melted over too high a heat. Once melted set aside to cool.

Add the cream cheese to a large mixing bowl, pour in the cooled white chocolate and vanilla and beat together.

In another bowl whisk the cream and icing sugar until softly whipped then fold this into the cream cheese mixture. Retrieve the base from the fridge and spoon the mixture into the tin and smooth the top out with a spatula. Return to the fridge and allow to firm up overnight or for at least 6 hours.

When ready to serve remove the cheesecake from the fridge and spoon over the cranberry sauce. If your cranberry sauce is very this you may need to loosen it up with 1 – 2 tablespoons of orange juice. Spread the cranberry sauce to the edges, it is best to do this before unclipping the tin so that you get a neat finish.

Using a vegetable peeler and the flat underside of your chocolate peel curls of white chocolate to sprinkle onto you cheesecake. When ready to eat unclip and transfer to a plate or cake stand and cut into 8 slices.

Mini Chocolate Ginger Tarts

375 g Ready rolled short crust pastry
100 g 70% dark chocolate
2 tbsp Caster sugar
60 ml Double cream
1 tsp Extra virgin olive oil
4 Pieces of stem ginger
3 Sheets of edible gold leafoptional

Directions

Unroll the pastry and using a pastry cutter slightly large than the holes in a mini muffin tray cut out 24 discs of pastry. You can knead together left over pastry and roll out to get the last few discs. Fit the pastry into the holes of a mini cupcake tray.

cut 24 small squares of parchment paper out. Place these into the pastry lined muffin trays and weigh down with ceramic baking beans or dry rice. Bake for 10 minutes, then remove ceramic beans or rice and the parchment paper, return to the oven and bake for 4 – 6 minutes until slightly browned and crisp. Then set aside to cool.

Meanwhile, prepare the chocolate filling by melting together chocolate sugar and cream over a low heat. Once melted turn off heat and stir in the olive oil. Then leave to cool.

Once the cases and filling have cooled add 1/4 tsp of chopped ginger into the base of each tart(reserve some for the tops as well). Add a teaspoon of chocolate to each. Then give the whole tray a bit of a shake to even out the chocolate. Use the remaining ginger, add a little to the top of each tart.

I find using tweezers the easiest way to work with the gold leaf as it is very fragile. (don’t even breathe in its vicinity). Pick up a sheet and dab the ginger on top to make it stick. Remove to a serving platter

20 g Soft butter
Sea salt flakes to taste
2 Rashers bacon Cooked & chopped finely

When all eggs have been shelled, split in half legthways, place the whites on a serving platter and the yolks into a mixing bowl.

To the yolks add mayonnaise, mustard, paprika, butter and season to taste with salt. Using an electric hand mixer, mix until combined add 1 teaspoon of recently boiled water, then beat again until a smooth velvety mixture is achieved. Add the 2/3 of the chopped bacon and fold into the mixture. Taste to check for seasoning.

Fill a piping bag fitted with a star nozzle with the mixture and pipe a rosette of filling into the hollow of the awaiting egg whites on the platter. Sprinkle with remaining bacon and chopped chives and dust with a little extra paprika.

Filling
1 tsp olive oil
OnionPeeled & cut into thin halfmoons
3 Garlic clovespeeled
1 Yellow peppercut into thin strips
1 tsp chilli flakesor more if you like it spicy
1 400g can chopped tomato
4 Chicken breast skinless & boneless
salt & pepper to taste
Cups & Dressing
5 Soft flour tortilla wraps
250 g Mexican style cheeseGrated
25 g Pickled jalepeno peppers (from a jar)
1 Small bunch coriander
250 ml Sour cream

Directions

Heat the oil in a large pan and add the onions, pepper and garlic. Cook over a low heat until softened. Then add in the chilli flakes and pour in the tomatoes. Fill the can with 200ml of water swirl to collect the remaining tomato in the can then pour into the pan.

Meanwhile, slice the chicken finely. Add the chicken to the pan with softened vegetables and tomato sauce. Allow to simmer for 20 minutes until the chicken is cooked through and sauce thickened. Season to taste. You can chill and refrigerate for future use at this stage.

Whilst the filling is cooking get on with preparing the cups. Stack the tortillas on top of one another, using a large pastry cutter wider than the rim of your cup cake tray, press down firmly on the stacked tortilla wraps (this speeds things up as you can cut 5 disks at a time). Repeat until all 24 disks of tortilla are cut out. Fit the disks into the holes of 2 x 12 hole cupcake trays. Place in a 200°C for 4 – 6 minutes until they begin to brown and toast.

Remove the tortilla cups from the oven and fill each 2/3 full with the filling and sprinkle a little of the spicy cheese on top of each and return to the oven until cheese has melted. Remove from the oven and transfer to serving platters.

Before serving sprinkle the chopped jalepeno and chopped coriander on top of the enchiladas and set some wedges of lime on the side for guests to squeeze over as they eat. Fill some small bowls or espresso cups with sour cream and leave a few teaspoons nearby for guests to add a little to their cup as they eat.
