Happy New Year 2022

Firstly, Happy New Year! I wish you good health and happiness in 2022. It has been another tough year lockdowns and restrictions and just when you think that it’s over the news breaks that comedy legend Betty White passed away on New Year’s Eve. Rest in Peace Betty.

New Year at least for me always feels like a time of change. I don’t really make resolutions or plans of diets. This year, however, I am going to or at least do my best to approach life more positively. The past couple of years have been trying for lots but as we move into a new year let’s do so with optimism and love.

Here are some recipes I am looking forward to in the coming days and weeks.

Hi Guys!!

I Hope everyone is as excited and glad as I am the weekend is almost upon us, its been a long long week. Sorry about the lack of updates and addition of new recipes but I have been extremely busy with some projects that for now must remain a secret even though I am bursting to tell you all. I just wanted to let you know that I have added a new recipe both to my site and YouTube channel for waffles. The recipe and video are both below I hope you enjoy and have a great weekend and I will catch up with you soon.

Harissa prawns spaghetti

Harissa Prawns with Spinach & Spaghetti

A quick dinner that is big on flavour. I use wholewheat spaghetti it’s nutty depth is perfect with the gutsy harissa prawns. You can of course though use regular spaghetti. By the time the spaghetti is cooked everything else will be ready to go meaning that you can have dinner on the table in 10 minutes. I hope you enjoy the recipe and have a great weekend.

Kefir Pancakes

These I boldly boast are the best pancakes ever! Light, fluffy and sponge like absolutely ideal for mopping up syrup or any of the butter pat that may have melted and run down the stack pooling at the bottom. I have posted pancake recipes before and I do at times still make those pancakes, but it is usually with kefir these days. It isn’t just because of this fabulous elixirs numerous health benefits but simply because I always have some in the fridge and it really makes the best pancakes ever.

Kefir for anyone not in the know is a fermented milk drink , it’s similar to a thin yoghurt. It originates in Russia and dates back to 1884. It is usually fermented over night with kefir grains giving the drink a sour, tangy slightly carbonated drink. I now use it in place of buttermilk in almost all my recipes as well as drinking every morning. one of my favourite recipes including kefir are my pancakes. I make them almost every weekend.

Slow Cook Oxtail stew

If like me you are craving hearty comfort food then have I ever got a recipe for you this slow cook sensation creates a large vat of stew that can make several dinners and only gets better the longer it sits. It also can be frozen making it extremely useful for weeknights. Simply thaw and reheat.

Oxtail is a cheap old fashioned cut, like most cheaper cuts it benefits from a long slow cook to make it tender. My recipe takes 5 hours in the oven so that the meat becomes so tender that it comes away from the bone with the slightest nudge with a wooden spoon. If it makes things easier you can pop it into a slow cooker rather than the oven, especially handy when your working.

I recommend eating with a large bowl of buttery mash or champ potatoes. To change things up for the next meal cook some pappardelle pasta, reheat and stir through the meat sauce, and sprinkle with a generous amount of parmesan for a rich and delicious ragu, or top with puff pastry for a delicious and simple pie to take care of the leftovers.

Summer may be coming to a rapid end. The weather has changed, the evening began to draw in. Whilst I do welcome the thought of cosy and comforting meals that will ensue, I am not quite ready to give up on the brightness and freshness that summer eats provide. Below are a few of the latest recipe editions to the site during August. You may notice that some of that cold grey skied weather has prompted a few dishes that help bolster and warm the soul. I do hope they can bring a little summery brightness to your eating.

Granola muffins

Making muffins for breakfast might seem like a lot of work, but it’s really not. These muffins simply require mixing a few wet ingredients into dry and giving them a lazy stir together. As a lumpy mixed muffin batter gives the lightest muffins. They are great as a grab and go breakfast. I most often make them at the weekends when I can have a relaxed breakfast and have several mugs of tea while they are in the oven. This allows me to ease into breakfast awake properly and actually enjoy breakfast rather than just fuelling myself for the day.

The muffins are packed with seeds and nuts both within and on top and I do this lazily and easily by using granola. Of course, you need to use a nut and seed granola and you can use one that also contains dried fruits as well if you desire it. Spelt or wholemeal flour gives the muffins body and heft whilst also being incredibly light and moist. Maple syrup imparts a subtle smoky sweetness and I’ve probably said it several times before but maple syrup and nuts are a legendary combo.  

They are best eaten warm from the oven. I can never decide what is my favourite way of eating them. With jam, butter or honey. So naturally of course, since the recipe makes 6 muffins and there are only two of us eating, we get three muffins each so I have one with jam one with butter and one drizzled with honey.

Happy Easter

It feels no time since I posted about St.Patrick’s day and the lack of celebrations this year and in the blink of an eye it’s Easter. Again, we will not be celebrating Easter with the usual traditions or customs. This doesn’t mean we have to let the occasion pass without marking it. I will still be indulging in my favourite recipes. I always have lamb at Easter it’s a tradition much like turkey at Christmas. This year though as I will be cooking for a lot less just the two of us it is for this reason I am sharing these two recipes that may be a little more suitable for those unable to celebrate with family this year.

Luscious lamb ribs

I am delighted and excited to share with you my recipe for lamb ribs. I am evangelical about this recipe. My first encounter with lamb ribs was at a young age. A local supermarket sold them and as a rare treat, we would get them occasionally. These ribs were kept in a hot cupboard all day and whilst big on flavour were nothing more than fat and bone, which is really a lot of what a lamb rib is about. These ribs were never very impressive in comparison, in appearance anyways to other ribs with there sticky glazes and sauces, but what they lack in appearance they sure made up for in taste. These ribs are nostalgic for me and evoke memories of childhood. Chewing on the bones until every last ounce of meat and flavour was gone.
I had completely forgotten about them for such a long time until recently seeing them in an utterly alluring episode of Simply Nigella. I tried immediately Nigella’s. Recipe and I did love it, but I had to reinvoke the flavours of my youth, and thus this recipe was born. I also as an adult realizing how expensive lamb can be, am even more entranced by this cut as it is not only one of the tastiest ways of eating lamb but also one of the most inexpensive was too.
I use a shallow roasting pan with a wire rack so that the ribs, which are a fatty cut, as they cook render their fat and let it drip below. I use all my favourite herbs and spices to use with lamb when cooking these; cumin garlic rosemary and of course mint. They take a long time to cook but are a very simplistic recipe. It’s merely a matter of combining the spices with just enough oil to make it into a wet rub to smoosh and coat the ribs in. When they have had their time in the oven the fat will have shrank and crisped, and the meat so tender that it comes away from the bone with ease.
