Black Forest Pavlova

A pavlova is without question one of my favourite desserts. I have quite the variety to choose from a simple straightforward strawberry, passionfruit curd, espresso and my newest pav is a chocolate one. My black forest pavlova consists of a crisp chocolate shell. That has a squidgy chocolate interior that is topped with a simple cherry curd, lashings of luscious softly whipped cream. Top it off with a scattering of finely chopped chocolate.

To maintain maximum crispness of the pavlova I suggest you don’t assemble more than an hour ahead. However, this doesn’t mean that you can’t prepare elements ahead of time. The base can be made a day ahead and stored in an air tight container. The curd also can be made the day ahead and stored in the fridge until required.

Hot Cross Buns

Hot cross buns are enriched buns studded with dried fruit and marked with a cross to represent the crucifixion of Christ. They are usually made and consumed at the end of Lent. I don’t restrain myself to Easter alone to enjoy these gorgeous buns. My recipe is an all inclusive recipe in that I know that a lot of people in particular children are not fond of the sultanas that are traditional in the buns. However, I do not completely stray from tradition instead I split the dough and to one half I add the tradtitonal sultanas and to the other half I add chocolate chips. The recipe produces twelve buns, giving you six of each. I must warn, that you will want, no need lots of good butter to go with.

Happy Easter

It feels no time since I posted about St.Patrick’s day and the lack of celebrations this year and in the blink of an eye it’s Easter. Again, we will not be celebrating Easter with the usual traditions or customs. This doesn’t mean we have to let the occasion pass without marking it. I will still be indulging in my favourite recipes. I always have lamb at Easter it’s a tradition much like turkey at Christmas. This year though as I will be cooking for a lot less just the two of us it is for this reason I am sharing these two recipes that may be a little more suitable for those unable to celebrate with family this year.

Lamb Ribs
