Happy New Year 2022

Firstly, Happy New Year! I wish you good health and happiness in 2022. It has been another tough year lockdowns and restrictions and just when you think that it’s over the news breaks that comedy legend Betty White passed away on New Year’s Eve. Rest in Peace Betty.

New Year at least for me always feels like a time of change. I don’t really make resolutions or plans of diets. This year, however, I am going to or at least do my best to approach life more positively. The past couple of years have been trying for lots but as we move into a new year let’s do so with optimism and love.

Here are some recipes I am looking forward to in the coming days and weeks.

Harissa Prawns with Spinach & Spaghetti

A quick dinner that is big on flavour. I use wholewheat spaghetti it’s nutty depth is perfect with the gutsy harissa prawns. You can of course though use regular spaghetti. By the time the spaghetti is cooked everything else will be ready to go meaning that you can have dinner on the table in 10 minutes. I hope you enjoy the recipe and have a great weekend.



					

Fish Tacos

I absolutely love doing the sort of food that involves lots having plates and bowls dotted over the table filled with picky things, when I have friends over. It is relaxing and cosy and always helps when you have a crowd, if you’re not sure about what your guests like and don’t like this helps as rather than having to leave things on their plate, they can simply just not put it on there in the first place. It also is a major bonus that everything is such a doddle to make. I use the oven to cook the fish as it leaves me free to get on with everything else, saving time even though it is a longer cooking method.

You can use any firm white fish for these tacos’ hake, cod or haddock. Prawns would also be great here.

Another great addition as a side dish is my crunchy salad with golden ginger dressing you can find the recipe here and if you really want to impress make your own flatbread for a more toothsome chew than the corn tortillas with my Nigella flatbreads

Duck & Orange Salad

This recipe consists of perfectly pink duck breast nestled in leaves with a simple fiery orange and ginger dressing spiky and hot that cuts through the richness of the duck.

Breakfast on the go – Overnight Oats

Overnight oats were ubiquitous across the web. Every time I was online, I came across pictures of these oats in mason jars topped with fresh berries. Beautiful, as these images are, I thought I would never enjoy them, cold raw oats, no thanks. now however I am so happy that I did I love the flavour, creaminess and the simplicity. The night before it is just a matter of mixing a few ingredients together or adding all ingredients to a mason jar and shaking them together. Pop into the fridge and breakfast is good to go. The real appeal to me was that it meant I had breakfast ready to go and they do keep you full up for a long time. If I’m eating them at home, I just remove them from the fridge 20 – 30 minutes before eating. If on the go they will probably have reached room temperature by the time you have reached your destination. These are perfectly good straight from the fridge, but you can give them a blast in the microwave to take the chill out of them.

There is an unending amount of flavour variations for these oats. Below is my favourite or at least my favourite so far, apple and cinnamon I add a little maple to sweet and any eating apple for crunch I prefer Pink Ladies as they are both crunchy and sweet. Here are some other variations I do regularly banana, peanut butter and cocoa, strawberry and kiwi and orange and rose water. You can also add a variety of nuts and seeds to top these toasted flaked almonds, pumpkin seeds, sunflowers seeds, chopped hazelnuts etc.
