
Combine all the ingredients for the sauce in a bowl, stir to combine. Then set aside until needed.
In another bowl, combine the minced pork, garlic, rice wine and soy sauce. Leave this to marinate for a few minutes while you get on with the noodles.
Cook the noodles according to packet instructions. 2 minutes before the noodles are ready slice the base off of the pak choi and add the leaves into the pot of hot water along with the noodles. When noodles are cooked and pak choi tender drain and return to the wartm pot they were cooked in until needed.
Heat the oil in a suitably sized pan or wok over a high heat. When hot add the pork and stir fry the pork for 4 -5 until cooked through.
It's now all about the assembly, I like to serve it quite traditionally by adding a couple of tablespoons of sauce to each bowl the top with the noodles and push a little of the pak choi to the side then add a large spoonful of minced pork. Scatter with chopped scallion and sesame seeds. Allow eaters to mix their own dish just before eating.
