Delicious puff pastry parcels with a cheese and ham filling. These parcels make a great on the go or portable breakfast that is delicious either hot or cold.

Preheat oven to 220°C/ 200˚C fan. Line a large oven tray with baking parchment or reusable silicone baking sheets.
Combine the cheese, egg, ham, and black pepper in a bowl. Then set aside.
Unroll the puff pastry and make three cuts lengthways and 4 cuts down the ways to create 12 squares of puff pastry. Dollop approx 1 teaspoon of the cheese mixture in the centre of each square. Pick up the corners and fold together in a loose parcel shape, pinch the centre to seal the point where all four corners meet.
Lay them on the lined tray. Crack the egg into a small dish and beat with a fork. Using a pastry brush, brush the jambons all over with the beaten egg. Place in the oven and bake for 15 -20 minutes until golden all over and puffed up. Allow to cool for 5 minutes before eating.

I used to love these things… but alas, now I avoid all grains! 😉
