This really isn't a recipe simple something I eat, often, and in particular after a few drinks. It's got everything I need carbs, protein, and spice to wake me up.

Hangover Eggs
Yields1 Serving
 2 potato waffles, frozen
 1 red chilli,
 1 tbsp Runny honey
 ½ lime, juiced
 Vegetable oil for frying
 1 egg
 Small bunch parsley

Toast the waffles in the toaster this may take 2 or 3 cycles until they begin turning golden brown at the edges and crispy.

Meanwhile, prepare the sweet chilli sauce by finely chopping the chilli. If you don't like your food hot remove the seeds or you could use a teaspoon of dried chilli flakes. Add the chilli to a small saucepan along with the honey and lime juice. Turn a low heat on under the pan and stir together as soon as the sauce foams up switch off the heat and set aside.

Add the oil to a frying pan and fry your egg to your liking, Retrieve the waffles from your toaster. Top with the fried egg and spoon over the chilli sauce. Roughly chop the parsley and sprinkle over the eggs add a little sea salt to the egg yolk too and enjoy.
