It is just what I need weekdays after an early gym session to replenish energy levels. I prefer not to add dried fruits but rather to add fresh berries and fruit as I eat.

This is a cake for those that struggle with icing cakes. The drippy icing simply is poured on top and gently pushed to the edge, some drips down the side, and this is favourable adding to its appearance. It is important with this cake to use cake pans with a solid base. The batter is a very liquid one, which gives a super moist crumb, if you use loose bottomed ones the batter may leak. This cake works well with any berry that is sharp and can balance the sweetness of the chocolate.

Cider & Bacon MusselsBy danieldiverMy cider and bacon mussels recipe really make for a speedy supper. Mussels are really quick to cook they take mere moments and they are so inexpensive which leaves me puzzled as to why they aren't more popular. Maybe its the fear of cooking seafood that is off putting. The rules with mussels are if any are opened prior to cooking give them a little wrap on the side of the bowl if they don't close discard them and when they have cooked any that aren't open can be discarded, making it really easy to identify any bad ones. When it comes to cooking it couldn't be simpler to tell when they are ready. They takes 3 -4 minutes to cook as soon as they have opened up and look like a nest of baby birds with beaks pointing upwards waiting for mothers food they are ready. You will also need lots of good bread to soak up all the briny juices.

Cottage PieBy danieldiverA classic cottage pie recipe. Minced beef and gravy with a cheesy mashed potato topping that is baked in the oven. The only difference between cottage pie and Shepards pie is the meat. Cottage pie requires minced beef whereas Shepards pie requires minced lamb. You can use whichever meat you prefer. Don't be alarmed by the amount of stock required in this recipe. The reason a lot of stock is required is that this recipe is a two in one. In that it also provides a delicious gravy to be served alongside the cottage pie.
Cranberry FizzBy danieldiverI couldn't have Christmas without lots of bottles of prosecco in the house and I couldn't have it without my cranberry syrup at Christmas. Even the colour is enough to liven up the spirits. This amount of syrup is enough for 4 bottles of prosecco. If you feel you will be having more then simply double the recipe for the syrup. Should you have any leftover it's gorgeous drizzled over ice cream or as a syrup for pancakes.
