Chicken & Chorizo Pasta

How to make chicken and chorizo pasta recipe. This creamy pasta is a real treat: it takes very little time to prepare in fact by the time the pasta has cooked the chicken and sauce will be ready.

 300 g Papperdelle
 1 tsp Olive oil
 100 g Chorizo sausage
 2 Chicken Breasts
 2 Cloves garlic
 150 ml Double cream
 2 tbsp Parmesan
 Salt & Pepper
 Small Bunch Parsley chopped

Bring a large pot of boiling water to the boil, salt well and cook the pasta according to packet instructions.

Meanwhile, Drizzle oil into a frying pan and cook the chorizo over a high heat until it releases it oils into the pan. Add the chicken and cook for a few minutes until cooked through. Check by cutting into the thickest piece and checking no traces of pink remain.

Lower heat under the pan and add the minced garlic cook for a couple of minutes before stirring in the cream. Add half of the parmesan and stir until it has melted. Switch the heat off under the pan. Check for seasoning, season accordingly.

Reserve a cup of pasta cooking water before draining the pasta. Tip the pasta into the pan of sauce and toss together. Using a a little of the pasta cooking water, jus a couple of teaspoons worth should be plenty, stir it into the pasta and sauce to help the pasta and sauce cling together.

Split between two pasta bowl. Scatter with chopped parsley and remaining parmesan., before scoffing greedily.
