A quick nubbly guacamole recipe. Deliciously simple.

Guacamole
Yields-28 Servings
 2 Large Ripe Avocado
 2 Cloves Garlic , peeled & minced
 Small Bunch Scallions White Part, finely sliced
 2 Limes, Juiced
 1 pinch sea salt,to taste
 1 Small Bunch of coriander,Chopped

Cut the avocados in half, remove the stone and scoop the flesh out into a large bowl. Mash until nubbly with a fork.

Mix in the garlic and half of the coriander.

In a small jug combine the lime juice and salt. Stir until the salt is dissolved into the lime juice. Pour into the avocado and stir through. Decant the guacamole into a serving bowl and sprinkle with the remaining coriander.
