In celebration of pride month I came up with this recipe. It's a simple white chocolate rocky road. What is fantastic about this recipe is that it really is a blue print for your favourite treats. You can switch the biscuits for malteasers, you could add glace cherries, pistachios, within reason almost anything.

 350 g White chocolate
 125 g butter
 2 tbsp Golden syrup
 100 g Rich tea biscuits
 65 g Mini marshmallows
 75 g Toffee popcorn
 80 g smarties

Line a 9" x 9" square tin with parchment paper. Melt together the white chocolate, butter and syrup in a bowl suspended over a pot of hot water, make sure the water isn't touching the bottom of the bowl. Alternatively give 30 second blasts in the microwave stirring between each blast until melted. Allow to stand for 5 minutes to cool slightly.

Break the biscuits, I like to do this by putting the biscuits into a bowl and bashing with a rolling pin. Stir the biscuits, marshmallows and popcorn into the white chocolate.

Pack the mixture into the prepared tin. Sprinkle over the smarties and refrigerate for 2 - 3 hours until set. Make 4 cuts horizontally and 4 vertically to make 16 rocky road squares.
