Foyle Pride 2021

In celebration of Foyle Pride 2021. I am sharing one of my favourite breakfast recipes. My super easy & delicious fully loaded scrambled eggs. As the name suggests this is a scrambled egg dish loaded with lots of good thing and it even has its own toast element. I hope if you are celebrating #Pride this weekend that you have a blast. Although the celebrations may be a little different I thoroughly hope you have the most fantastic time.

One pan eggs that even containing it's own toast element.

Fully Loaded Scrambled Eggs

Yields1 Serving

 1 Soft tortilla wrap
 1 tsp Olive oil
 20 g Chorizo, chopped
 1 Small bunch spring onions
 1 red chilli, deseeded & finely chopped
 4 Cherry tomatoes
 2 Eggs
 1 Handful of baby spinach
 1 Small bunch coriander

Roll the tortilla wrap up into so that it resembles a fat cigar. Snip it into strips directly into a dry non stick pan. Toast the strips of tortilla until they just begin to colour. Then dump them onto a plate and set aside.

To the pan the tortilla was toasted in add the oil and chopped chorizo, Stir about until the chorizo begins to omit it orange oils into the pan then add the scallions, chilli, spinach and tomatoes, Cook for a further 2 - 3 minutes until they are soft and spinach wilted.

Push everything to one side in the pan and crack the eggs into the empty side. Scramble them with your wooden spoon. Sprinkle with salt. When almost cooked to your desired doneness add the strips of tortilla back to the pan and mix in the chorizo and vegetables.

Chop a little coriander and sprinkle over before serving.
