Cauliflower CurryBy danieldiverMy Cauliflower curry is a gloriously vibrant and fragrant curry. I make this curry often just before doing the grocery shop so that I can use up all the bits and pieces hanging about the veg drawer. You can add or substitute the cauliflower for chic peas, baby corn, sweet potato, butternut squash etc. This recipe is vegan, although vegan when I have had friends over and made several curries this is always the first to run out everyone loves it even the meat eaters. However, if you like you could switch the cauliflower for chicken. Chocolate & Peanut Butter GranolaBy danieldiverMy chocolate and peanut butter granola is crunchy, smokey and gorgeous. I make a big batch of this on a Saturday morning, and it lasts all week, plus it scents the house with the cosiest warm scent. It is just what I need weekdays after an early gym session to replenish energy levels. I prefer not to add dried fruits but rather to add fresh berries and fruit as I eat. Coconut MacaroonsBy danieldiverThese coconut macaroons are very easy to make and require very few ingredients. I often make these as a simple sweet treat for a party. I leave a few kilnear jars of them dotted about the room so guests can eat the little coconut bonbons as they please. FrogurtBy danieldiverSweet and creamy mango frogurt. I make this so often in those times of sudden urge when hit for a craving for something sweet. What I really love about this is that it can be eaten like soft serve straight from the blender if your in desperate enough straights.
Note: It is important to note due to the low fat content the frogurt will set solid once frozen. The lower the fat content the more solid it will set. You will need to take it out of the freezer at least 15 minutes before eating to let if soften a little.Harissa Prawn, spinach & SpaghettiBy danieldiverA quick and nutrious recipe that take hardly any time to prepare.Loaded Scrambled EggsBy danieldiverOne pan eggs that even containing it's own toast element.Salmon with Bulgar Wheat SaladBy danieldiverThis delicious salad is packed with flavour and nutrients.Tandoori ChickenBy danieldiverTandoori chicken gets its name from the bell-shaped tandoor clay oven which is also used to make naan, or Indian flatbread.
Chicken thighs are marinated in a tenderizing mixture of yogurt, lemon juice, and spices and the meat is slashed to the bone in several places helping the marinade penetrate and the chicken cook more quickly.
You don't need a tandoor oven to make tandoori chicken!. You can cook it in a hot oven. Of course should you prefer you can use skinless chicken breast though it will not be as tender and juicy as the thighs. Turmeric, Ginger & Butternut Squash SoupBy danieldiverEven this soup's vibrant colour, I find, is mood enhancing. Is there anything better on a cold day than a bowl of steaming soup. In my case however it is mostly eaten from a mug at my desk as I work. A word of caution when preparing this soup the turmeric will stain your spoon if it's wooden and your hands whilst peeling so to prevent it looking like you smoke 60 a day wear gloves.
If you like your soup really thick add 1 litre of stock, you can always add a little boiling water at the end if you want to thin it down,
