Fish TacosBy danieldiverGreat for feeding a crowd. The DIY element at the table really helps to relax and bring people together.
Grilled CheeseBy danieldiverThis sandwich may be more familiar to us this side of the pond as a cheese toastie. I do love the American term grilled cheese so have decided to go with that as the title. This is without question one of the most made sandwiches in my house and one of the most comforting.
Halloumi, Mint & Pomegranate SaladBy danieldiverA refreshing and vibrant salad. Halloumi has a rubbery salty consistency when heated and browned in a dry frying pan it turns it into what I think of as vegetarian bacon. The combination of rocket, mint leaves, and pomegranate seeds give you a peppery refreshing salad with bursts of fruitiness.
Marry Me ChickenBy danieldiverA recipe so good that well frankly if this doesn't get you a marriage proposal then nothing will. A creamy garlic and sun dried tomato pasta sauce with delicious succulent chicken. This version is a little lighter and less rich than the original. Feel free however should you like to add another couple of splashes of cream to your sauce.
Pork Chops & Gnocchi with Creamy Mustard SauceBy danieldiverMy creamy pork chops & gnocchi in creamy mustard sauce recipe makes for such a speedy dinner that is comforting and reinforcing. The juicy pork chops and garlicy mushroom and mustard sauce with the plump little dumpling is exactly what home cooking should be. I so often when making this add some frozen peas into the sauce towards the end so that it also contains the vegetable element.
Potato & Leek SoupBy danieldiverSoups are usually very inexpensive to make, and this potato and leek soup is no exception. A rich velvety soup that is hearty and filling. Ideal for lunches or a first course. A hunk of crusty bread and butter and it's an entire meal.
Salt & Chilli ChickenBy danieldiverI cannot express emphatically enough how much I love this dish. Crispy chicken pieces with stir fried vegetables and a simply speedy chilli chicken glaze. It's not very complicated and doesn't require much skill to prepare and is so much better than a takeaway. I suggest serving with noodle, chips or even potato wedges since the ovens on anyways.
Smoked Haddock & Bacon ChowderBy danieldiverA speedy chowder that a fraction of the time it takes to make a traditional chowder. This chowder uses thawed frozen sweetcorn as the base which adds lots of flavour and gives the soup it's a thick consistency making for a heartwarming and soul soothing chowder.
Smoky Bacon SoupBy danieldiverOn a cold day there are few things as reassuring and comforting as a bowl of soup. This soup not only brings that comfort as you eat but also as you cook the smoky bacon aroma will fill the house and leave everyone salivating. Like most soups this soup is ideal for batch cooking and freezing in individual portions.
Soul Soothing Chicken Noodle SoupBy danieldiverThe name says it all. This soup is the type of soup that I turn to when the deepest of comfort is required. I should state as well that when this soup is required the last thing I and probably you want to do is follow a recipe. This truly is a blueprint recipe use what you have to make it. I get the foundations of the soup under way and pull out the veg drawer out place it on the counter and whatever can be used or needs using goes into the soup.
Spaghetti CarbonaraBy danieldiverThis cheesy Italian Classic is simple, delicious and quick to make. By the time the pasta has cooked all will be ready to go.
Steak with Anchovy & Garlic ButterBy danieldiverMelt in the mouth ribeye steak with a delicious anchovy and garlic butter. This is a real treat dinner, that is a doddle to make. The anchovy and garlic compound butter elevates a steak to a whole new level. Leftover butter can be refrigerated or frozen for later use. It is excellent tossed with some cooked spaghetti and a little parmesan sprinkled over for an easy supper or placed on top of a pan-fried breast of chicken.
