Swedish MeatballsBy danieldiverA large pan of glossy Swedish meatballs is certainly a mood enhancing site. No matter how many of these I make they get eaten. This recipe makes 20 meatballs enough to feed 6 people generously although, if as greedy as we are 4 of you may be able to finish them off. I do warn though you may not be able to move for awhile afterwards. I used to make an onion gravy to go with these meatballs I felt it was very labour intensive slicing the onion, sweating them over a low heat for about 20 minutes. Sweet Potato WafflesBy danieldiverSweet Potato waffle recipe. These make a great make ahead breakfast. Make a large batch of these light and crispy waffles at the weekend and pop them into the toaster and toast them and you have breakfast in minutes.
Tandoori ChickenBy danieldiverTandoori chicken gets its name from the bell-shaped tandoor clay oven which is also used to make naan, or Indian flatbread. Chicken thighs are marinated in a tenderizing mixture of yogurt, lemon juice, and spices and the meat is slashed to the bone in several places helping the marinade penetrate and the chicken cook more quickly. You don't need a tandoor oven to make tandoori chicken!. You can cook it in a hot oven. Of course should you prefer you can use skinless chicken breast though it will not be as tender and juicy as the thighs.

Turmeric, Ginger & Butternut Squash SoupBy danieldiverEven this soup's vibrant colour, I find, is mood enhancing. Is there anything better on a cold day than a bowl of steaming soup. In my case however it is mostly eaten from a mug at my desk as I work. A word of caution when preparing this soup the turmeric will stain your spoon if it's wooden and your hands whilst peeling so to prevent it looking like you smoke 60 a day wear gloves. If you like your soup really thick add 1 litre of stock, you can always add a little boiling water at the end if you want to thin it down,
Upside Down NachosBy danieldiverThese nachos are upside down so that the chips retain all their crunch. This is the perfect sharing feasts but also great for a couple to graze on greedily whilst enjoying a movie.
Vanilla CupcakesBy danieldiverVanilla cupcakes or as I prefer happiness in a paper case. Soft spongy cupcakes with a soft luscious buttercream. I adore these cupcakes mostly due to the buttercream I can find buttercream just too much, sickly even. This buttercream, however, is a Swiss buttercream which isn't overly sweet.
Waffles with Blueberry CompoteBy danieldiverWaffles with blueberry compote is one of my houses favourite weekend breakfasts. The compote is somewhere between a soft set jam and a compote but works so well with the waffles and what is also great about it is you can use frozen berries so you can make it anytime without a trip to the shops for fresh berries. If blueberries aren't your thing serve with any other fresh fruit of your choosing or perhaps with crispy bacon and eggs. Should I be lucky enough to have any waffles leftover I use them for dessert. I pop them into the toaster until warmed up and serve with vanilla ice cream and if I have blueberry compote left, I warm that and pour over the waffles or make a quick salted caramel to pour over them.
Warm Goat Cheese, Fig & Parma Ham SaladBy danieldiverThis warm goats cheese, fig & parma ham salad is super easy and very tasty. It may be simple to make but the flavours are far from simple. I'm not particular fond of goat's cheese but in this salad I love it. The creamy tanginess of the goats cheese pairs beautifully with the sweetness of the figs and the delicious parma ham.
White Chocolate & Cranberry Christmas MuffinsBy danieldiverWhat i love about muffins is that they are so simple to make. It's as simple as mixing dry ingredients and wet ingredients together and stirring lazily until barely combined, after all lightly stirred muffin produces a light end product. A quick blast in the oven and you will have a delicious batch of muffins to enjoy throughout the day.
Yoghurt & Lime CakeBy danieldiverA light and spongy cake with a zingy and refreshing yoghurt topping. This cake is simple and straightforward as it's only one layer and the topping is a simple yoghurt and lime mixture that is no more strenuous than mixing a few ingredients together.
